The second thing is what kind of spam filtering the web hosting server provides. Spam filtering is an important part of any e-mail package, since a lot of spam can make your server go down. As a result, make sure that your e-mail server also has some anti-malware package to protect you and your customers against malware going around using e-mail as the conduit. Finally, you need to make sure that the e-mail server has registered the right DNS entries to the DNS server such that the DNS server knows exactly where to locate the e-mail server in case the IP address of the e-mail server changes.
